Ode to Cobb Salad

was a friend’s birthday party this weekend, and a large group of us went out for dinner.  I could focus on the fun frivolity of the event, but the true highlight of my evening was the super-sized Cobb salad I ordered for dinner.  In this picture, the wine is gone and the salad has been eaten, yet you still see lettuce.  The restaurant used an entire salad head, and how do I know, you may ask?  I found the core of the head at the bottom of the bowl.  Too much lettuce can be my only complaint.

Cobb salads are one of my favorite salads.  What is not to love about fresh avocado, bacon bits, and hard-boiled eggs chopped up and tossed in a blue cheese dressing?  This was my weekend-bacon-eating adventure.  I hope you enjoyed your bacon as much as I did!
