Easy Summer Salad – Strawberries & Goat Cheese

What do you make when you need something quick and easy?  Salads are great for moments like these when you don’t have the time to cook but want to eat right. I’ve been packing up my apartment and realized around 2 p.m. that I hadn’t eaten lunch but was starving.  So I rummaged around my fridge and tossed this salad together.

Quartered Strawberries

Toasted Sunflower Seeds

Crumbled, Herbed Goat Cheese

Oil & Vineger

I threw all the ingredients together within 5-10 minutes and tore off a piece of sun-dried tomato focaccia bread.  Voila!  Lunch!

A good addition would have been garbanzo beans or some type of protein like tempeh to add more substance. I may not be athletic or good at much, but I can always feed myself.

P.S.  Who else was disappointed by the opening ceremonies of the London 2012 Olympics?
