Mint Pork Chops with Kale and Baked Potato

chops are so easy to cook. They are thin cuts of meat so it doesn’t take long.  I seasoned the pork chops with salt, pepper and fresh mint.  I browned one side, flipped it over and poured in a 1/4 of white wine and covered them to let the steam cook it completely through (roughly 7 minutes).  I chopped some kale and dropped in the same skillet with the pork chops for the last few minutes to wilt the leaves.  I made the baked potato in the microwave.  Remember to pierce the potato with a fork before microwaving (I vaguely recall my sister forgetting to do this once and the potatoes exploded.)  Microwave on high for 5 minutes, flip over and repeat.  Then cut it in  half, mash the insides with some butter and mint and microwave for another minute.  This entire meal with

I made the Reese’s Pie the night before because it has to chill to  help it set; however, the entire pie process took only 15 minutes.  I found this healthy dessert idea off Pinterest.  Mix 32 oz of greek yogurt with 3/4 cup of creamy peanut butter.  Pour this into a prepared graham cracker crust.  I folded in chunks of Reeses’s to add more texture and sweetness.  I’m not a health nut, and I don’t want my dessert to taste healthy.  This pie is delicious and quick to make!
