The Best Quinoa Salad You’ll Ever Taste!

I haven’t made quinoa in a long time.  In fact, I can’t remember the last time I made or ate quinoa.  This was a mistake.  I’ve had a bag of quinoa in the back of my pantry for months, I finally dragged it to the surface this weekend since I hadn’t gone grocery shopping since my return from my trip.

Quinoa cooks with a 1:2 ratio.  I browned a little bit of garlic in some butter in a pan before tossing in a cup of quinoa and mixing everything together.  Quinoa by itself can be blend.  It’s all about the infused flavors.  I added two cups of chicken broth and some aromatic Italian herbs and simmered for 15-20 minutes, or until al dente.

I halved grapes and mixed it with sauteed kale and a 14 oz can of garbanzo beans. I drizzled olive oil, salt and pepper over everything and mixed it with the cooked quinoa.  Serve with avocado slices (optional).

I will definitely be making this again!
