- Dip zucchini in egg and herbed planko bread
- Lay on cookie sheet and bake at 450 F until done (about 15 minutes)
They should come out golden and crisp!
I served the zucchini chips as a side dish to my favorite quinoa salad (featured on my blog earlier this month).
As I remake the salad, I change-up the ingredients a bit, depending upon the supplies in my pantry. It has always turned out amazing! Quinoa is extremely versatile and blends well with different types of ingredients!
(Personal Note: I bet my mother would have never guessed she would live to see the day I would voluntarily eat zucchini.)
