Coconut Lemongrass Chicken Soup with Bok Choy

Cube the chicken and brown in pot with salt, pepper, grated ginger (eyeball to your liking) and grated lemongrass (also to your preference).  I like a the ginger and lemongrass to be strong so I cut up some large chunks that can be later fished out.

Pour in the coconut milk once the chicken has browned and simmer until al dente.


I steamed the bok choy on top of my simmering coconut chicken soup.


Serving everything over rice!
