I hate to be a hater, but I have always believed Valentine’s Day was a capitalistic holiday designed for the commercial industry to drive everyone crazy. If I’m in a relationship, my significant other better be appreciating me all year round. This is why I always try and keep Valentine’s Day low-key. I made dinner at home – salmon patties, wilted kale and boiled potatoes. Potatoes are one of my favorite vegetables (It’s a toss up between potatoes and corn), but if I cook with potatoes as my side dish, my meal turns out very yellow. I’m not health conscious, but I do try and eat every color in the rainbow. I remedied this problem by selecting a variety of potatoes, Korean Purple, Red, and Yukon Gold potatoes.
boiled the potatoes in a pot, throwing in the Kale at the end to wilt them. I kept the seasoning light, only salt and pepper.
I threw together the salmon patties based on what I would expect be in them (this is not very scientific):
- canned salmon
- bread crumbs
- lime juice
- salt & pepper
I mixed everything together and formed patties, frying them until they’re crispy and brown. I made a dipping sauce for the patties mixing sour cream with lime juice. They turned out amazing! Work has been keeping me so busy that I haven’t cooked much lately. Fortunately, cooking is like riding a bike. Once you learn, you never forget.
