Easy Peasy Beef Stroganoff-y

I don’t know what to make, I usually make pasta.  I’m sure there must be some Italian in my Vietnamese heritage based on the amount of pasta I consume alone, not to mention breads and what-nots.

So when I was grappling for dinner ideas this week, I decided on pasta, specifically beef stroganoff!  I always thought stroganoff sauce was difficult, but not anymore!  After a quick Google search, I found a simple stroganoff sauce recipe:

1 can of condensed cream of mushroom soup

1/3 cup of sour cream

1/2 cup of milk

Paprika to taste

* I added some chili powder for an extra kick

  1. Browned chopped beef
  2. Stir in Stroganoff sauce
  3. Chop butternut squash, let boil in sauce until tender
  4. Cook pasta in a separate pot, drain, and toss with sauce mixture – Done!

Stroganoff is simple and delicious!  I will definitely keep this one in my recipe Rolodex!
