FOODIE FRIDAY: Cinco De Mayo Taco Salad

Feliz Cinco de Mayo!  While I may eat a lot of Asian food, I do make an exception on May 5th.  To celebrate Cinco de Mayo, I made a taco salad, which reminded me I should make more salads.  Not only are salads  mostly assembling and very little cooking, they are very healthy.  This is good considering the rain has kept me from going on  my weekly runs lately.

mozzarella cheese
1 lb ground beef
taco seasoning
Chop all the vegetables and toss together.  Brown ground beef in a skillet and stir in taco seasoning.  Plate with ground beef on top of salad with extra cheese. Voila!  

I should do this more often!  Salads are definitely the perfect answer to an easy week night dinner.
