Chicken & Coconut Rice

  • Boil 1 lb of chicken and shred it,
  • Simmer together coconut milk, lime juice and spices to taste (I usually mix together different curries).
  • I sauteed slices of red bell peppers and the shredded chicken in the sauce until cooked.
  • I served the chicken mixture over coconut rice with a fresh squeeze of lime juice and chopped cilantro.

This is my basic recipe for curry. As long as you start with coconut milk and curry broth, you really can’t go wrong.
