For a quick week-night meal, buy a sauce that you can reuse and reuse! I picked up this peanut satay sauce weeks ago (beauty of canned goods) and have been putting it to good use as my weeks seem to get shorter and my to do list longer. I rubbed this sauce on salmon and browned it on each side.
I chopped kale and steamed it in white wine sauce with two vietnamese red peppers and Kalamata olives to give it a kick. I finished the salmon in the same skillet as the kale and let everything simmer in the white wine sauce to infuse the flavors!
I love cooking with fish on a week-night because it doesn’t take long and picks up flavors from other ingredients really well! This took less than 30 minutes cooking (not counting prep time!)
